“After Eight Mint” Brownies
Make your brownies extra special by adding a layer of After Eight Mints. The magic of it is you get to eat the chocolates any time you like.
As with other brownie recipes, you will need a brownie tin – they are about 23cm square and 3cm deep.

1. Preheat the oven to 180 degrees Centigrade/ Gas Mark 4. Make the chocolate brownie mixture.
2. Line a tin with greased greaseproof paper or baking parchment. (These Brownies can be tricky to get out of the tin. Greaseproof paper will really help.) Spread HALF of the mixture evenly in the bottom of the brownie tin.
3. Cover the mixture with a single layer of After Eight Mints. You will probably need about 17 mints – 16 to cover the mixture and one to eat yourself!
4. Spread the rest of the chocolate mixture over the top of the After Eight Mint layer.
5. Put the tray into the oven and bake for about 20 minutes. Remember, when they are done they will look dry and pale on top and be firm in the middle of the tray. Try not to over cook them or they won’t taste as nice.
6. Let them cool in the tray for about fifteen minutes before cutting them into smallish squares. Use a knife to lift them out of the tin and then allow to cool.
